Primal Sweet Potato Pancakes

I made these tasty things one night when I was tearing through the fridge and pantry trying to figure out what I was going to make for dinner. They are so simple and so easy! One sweet potato yields about four "pancakes".


1 sweet potato
1 egg, beaten
cooking oil/grease of your choice
salt & pepper

Grate one sweet potato. Press the grated potato shreds between two paper towels to draw out some of the moisture. Combine potato shreds and egg in a bowl. Stir in salt and pepper to taste. Over medium heat add cooking oil or grease, enough to cover the bottom of the pan. (I had just cooked up some bacon so I used the left over bacon grease.) Using your hands press the potato shreds into compact pancakes. Place 2-3 pancakes in the hot pan, cook through and brown on each side for about 5 minutes. Depending on how thick your pancakes are it could take longer. Place on paper towel lined plate while you cook the rest of the pancakes.
